Willie Bobo's classic, "Fried Neckbones (and some homefries)"
Mongo's "Sweet Tater Pie" and "Sofrito" which is the basic beginning of Caribbean food, tomatoes, onion, green/red peppers. Seasoning
Tito Puente's Picadillo, El Rey's favorite platter, a seasoned ground beef in tomato sauce "hash", sometime with potatoes
Horace Silver's Red Beans n Rice(so nice I'll have some twice)  and yes New Orleans Creole cooking is Caribbean cuisine
